Keto Magic Cheesecake

Many of you already know I have Diabetes (20+ years) and that I keep it under control with a low-carbohydrate “almost Keto” diet and “Intermittent Fasting.”

The Canadian province I live in (Alberta) had a huge exodus of Doctors because of billing disagreements with the government. Combined with COVID this has caused countless problems for countless numbers of people.

I almost immediately lost my regular doctor and have had over two years of hell trying to get a new one. I thought I had the problem solved just before Covid started up. Loved my new DR … she was willing to talk about Keto and fasting and negotiate about medications.

BUT alas, about six month into Covid it turned out that she discovered “homeless people.” She went from fully available at the clinic to 4 days, then 3 days, then 1 day and then totally abandoned all her clinic patients to work with homeless people.

I suspect that she was one of the FEW doctors willing to risk exposure to Covid through contact with a totally unprotected, unmasked, un-vaccinated population. For that I admired her. But abandoning a Diabetic in a climate where it is virtually impossible to find a new doctor? I freaking HATED her.

So the search began. In the mean time I had to deal with temporary “walk in only”…
