Chocolate & Frozen Raspberry Ice Cream 2.0菜鳥第一次做冰淇淋,第一個版本的巧克力冰淇淋做出來的口感偏硬,很不方便取用,烤盤都被湯匙刮出刮痕了(心疼)。很納悶, 明明照著食譜做,為什麼沒有冰淇淋該有的綿密口感?馬上google搜尋更多冰淇淋作法,終於讓我找到問題點了。原來口感綿密的訣竅在於冰凍過程中的攪拌 (使用冰淇淋機就沒有這個問題), 所有材料混合拌勻後,送入冷凍庫凍約2小時需拿出翻攪再壓實,之後約每半小時拿出攪拌一次,大概重複兩三次後,綿密口感冰淇淋就完成囉。
