Vegan pizza with eggplant, tomato and soy cheese

Replenishing my recipe box with vegan vegetable pizza. Lean pizza, no cheese or other animal products.
I love making pizza with whole wheat flour mixed with peeled rye. It turns out to be more useful. If this is unusual for you, then you can use regular white flour.

Dough without yeast, preparing as quickly and easily as possible.
I supplement this pizza with tofu “cheese” sauce.

Ingredients:

For the test:

Rye flour 130 g.
Wheat flour c / z 150 g.
Baking powder — 7 g. Instead of baking powder, you can use soda and citric acid in a ratio of 5: 3.
Water — 140 ml.

For topping:

100 ml homemade tomato sauce. Alternatively, you can use tomato paste mixed with garlic, salt, oregano, and basil.
Eggplant cut into slices. I have frozen.
Sliced ​​tomato
Sweet peppers, cut into thin slices.
Red onion, cut into rings or thin slices.
Fresh frozen green peas
Salt
Dried oregano and basil.

For “cheese” sauce:

Tofu 100 g.
Lemon juice — 2 teaspoons
Soy sauce — 1 tbsp the spoon
Mustard powder — pinch
Garlic 1 clove
Vegetable oil — 1 tbsp. the spoon
Water — 2 tbsp. spoons

Step by step recipe

Mix two types of flour and baking powder.

Gradually pour in water, knead the dough.

Let the dough lie down for about 20 minutes in a lidded bowl so that the dough does not dry out. During this time, the gluten in the flour will swell, the dough will become more elastic and roll out better.

We form a ball from the dough. We roll it into a thin cake. We transfer the cake to a baking sheet covered with baking paper.
We form small sides.
We coat the pizza with sauce.

Fry eggplant slices in vegetable oil on both sides until golden brown.

Cut the onion, tomatoes and bell peppers into thin slices.

Put on the pizza circles of eggplant, tomato, pepper and onion, green peas. Add some salt. Sprinkle with basil and sprinkle.

We put the pizza to bake at a temperature of 250 degrees C for 10–15 minutes.

Cooking “cheese” tofu sauce for pizza. To do this, mix in a blender and grind tofu, lemon juice, soy sauce, mustard powder and garlic, vegetable oil and water.

Place the tofu sauce on top of the pizza. We cut the pizza and enjoy :)
