Frittata is a Perfect Way to Enjoy Eggs and Have a Light Dinner

Crafting a main course around eggs usually brings to mind breakfast; however, a frittata can be satisfying for brunch, lunch, or even a light dinner.

Regarding eggs, our minds often jump to breakfast or brunch. But why not let them shine as the star of a delicious lunch or light dinner? In our home, my wife is the frittata master, and I can't help but credit her for this mouthwatering creation. I whipped up some home fries with smoked paprika to accompany them.

Ingredients: (For two)

  • 3–4 large eggs at room temperature
  • Pancetta or bacon (optional)
  • Onions
  • Tomatoes (1/2–3/4 cup chopped or a few grape or cherry variety)
  • 1/4–1/3 cup milk (low fat or whole) or some ricotta cheese
  • Cheese (she used a generous handful of Greek feta and grated Pecorino)
  • Peppers (sweet bell), a handful of diced
  • Parsley- about 1/4–1/3 cup chopped

Directions:

  1. Use a 6–8 inch cast iron, carbon steel, or heavy metal pan. Preheat the oven to 425 degrees F or 225 degrees C.
