Cornmeal Waffles

These are the lightest and crispiest waffles that are adapted from a traditional waffle recipe with no dairy and no added sugar. They take less than 10 minutes to make and are a perfect breakfast if you have a waffle maker.

Waffles with Berries & Maple Syrup

Ingredients:
1/2 cup olive oil
1 cup all purpose flour
1 cup cornmeal
1 teaspoon baking powder
1 teaspoon kosher salt
1/2 teaspoon baking soda
1 cup coconut yogurt (or two 5.3oz containers)
1 cup almond milk
4 large eggs

In a large bowl whisk together dry ingredients: flour, cornmeal, baking powder, salt & baking soda.

In a separate bowl whisk together olive oil, coconut yogurt, almond milk & eggs.

Fold wet ingredients into dry ingredients until fully mixed.

Turn on waffle iron and coat lightly with olive oil. Cook based on waffle maker instructions.

Serve with fresh fruit, maple syrup or any other desired toppings. Eat immediately.
