Kao Soi

Kao Soi was introduced to Northern Thailand,
via Laos and Myanmar by Chinese migrants
after fleeing oppression in Yunnan, South China
during the mid-1940s.

Kao Soi is a popular street dish you will never forget
and probably hanker for on the return home after a mega holiday
in Thailand, the Thai version is promoted here,
well, it would be now; I live and eat Kao Soi there.

Thailand’s Kao Soi is a delightful palette dancing curry soupy noodle dish,
no exaggeration!

Pickled mustard greens, shallots, lime, chillies, lots of garlic,
(of course), and your choice of meat, or not, fried in a wok,
(Olive oil if you please).

Mix in curry sauce similar to yellow or massaman,
then add coconut milk, stirring it all joyfully together.

Salivating yet?

Add egg noodles, the ones you prepared earlier, well, you know now;
or as Lucy Dan 蛋小姐 (she/her/她) may have it, ramen noodles.
Top off with deep-fried crispy noodles you prepared earlier; what?
Well, again, you know now, also bean sprouts if you fancy.

Serve in a massive bowl because you just know,
after reading this, you will be super excited and make enough
for a family of five and eat it all yourself while they watch you!
