3 healthy zucchini recipes, own picture

Zucchini is one of my favorite veggies! Not only is it full of different minerals, such as potassium, calcium, or phosphorus, and at the same time, it’s also low in calories. Nevertheless, the best thing about this vegetable is that it’s soooo versatile!

Then here come 3 super simple and quick healthy zucchini recipes that taste anything but healthy!

Recipe 1: simple zucchini salad

First is the zucchini olive salad. I love this recipe as a light dinner in summer. But it is also perfect for a lunch box and can be prepared the night before.

Preparation time: 15 min.

Cooking time: none

Yields: 2 servings

Ingredients:

  • 2 small zucchini (approx. 300g)
  • 60g olives
  • 40g dried tomatoes
  • 10g basil
  • 15g pine nuts
  • 5 tbsp greek yogurt
  • 1 tsp mustard
  • 1–2 tbsp white balsamic vinegar
  • salt and pepper to taste

Instruction:

  1. Cut zucchini with the spiral cutter.
  2. Cut tomatoes and olives into small pieces and add to the zucchini.
  3. Mix all remaining ingredients (except the pine nuts) to a dressing and pour over the salad
  4. Roast the pine nuts in a pan until golden brown and then pour over the salad.

Tip: Instead of pine nuts you could also use pumpkin or sunflower seeds.

Recipe 2: zucchini fans

This dish tastes like an Italian vacation! Full of Mediterranean flavors with a lot of fresh herbs like rosemary and thyme.

Preparation time: 15 min.

Cooking time: 15–20 min.

Yields: 2 servings

Ingredients:

  • approx. 400g zucchini
  • 120g feta cheese
  • 100g cherry tomatoes
  • Fresh (or dried) herbs of your choice (I used rosemary, thyme, and basil)
  • ½ lemon
  • 2 tablespoons olive oil
  • salt, pepper, and chili flakes to taste

Instruction:

  1. Cut the zucchini into compartments (see picture)
  2. Cut feta and tomatoes into slices and distribute them in the compartments
  3. Spread herbs, oil, and juice of half a lemon over the zucchini
  4. Season with salt, pepper, and chili and put in the oven at 180 degrees top/bottom heat for about 20 min.

Recipe 3: zucchini brownies

The third recipe is by far my favorite! Sweet and moist brownies that are healthy at the same time. I tell you, you HAVE to try these!!

Preparation time: 15 min.

Cooking time: 30 min.

Yields: 4 servings

Ingredients:

  • 130g oats
  • 50g coconut sugar
  • 1 pk. Bourbon vanilla sugar
  • 30g dark chocolate drops (sugar-free)
  • 100ml soy milk
  • 300g zucchini
  • 1–2 eggs (depending on size)
  • 60ml coconut oil
  • 10g cocoa nibs

Instruction:

  1. Process oats into oat flour. Then put all dry ingredients in a bowl.
  2. Grate zucchini and squeeze the water out of the zucchini.
  3. Separate the eggs. Add egg yolks and remaining “wet” ingredients to the bowl and mix well.
  4. Beat the egg whites until stiff and fold into the batter.
  5. If desired, fold in walnuts and cocoa nibs or spread on top of the batter in the pan.
  6. Place in the oven at 180 degrees top/bottom heat for 30 min.
