Best Brunch Recipes with Mimosas

In the springtime, my church women’s group always had brunches. There were lots of women, so there was lots of food. We were selective about what we brought, as it wasn’t exactly potluck. There was a menu. So, naturally, this took a lot of planning! But it was always worth it and our husbands were pleased because we brought the leftovers. Along with that, there were also new recipes that we would trade with each other, sometimes. But they were not always from the same church. I had belonged to another church a long time ago, and that’s where I had discovered some pretty interesting recipes and kept them ever since.

Egg and Bacon Bake

  • 1/4 cup dry bread crumbs
  • 1 tbsp butter
  • 5 hard-cooked eggs, peeled and sliced
  • 3 slices of bacon, chopped
  • 1 cup dairy sour cream
  • 3 tbsp finely chopped onion
  • 1 tbsp milk
  • 1/2 tsp salt
  • 1/4 tsp paprika
  • 1/8 tsp pepper
  • 1/2 cup shredded cheddar cheese

Toss bread crumbs and butter. Divide among four buttered 10-ounce custard cups. Layer egg slices over bread crumbs.

Fry bacon until crisp and drain. Mix bacon, sour cream, onion, milk, salt, paprika, and pepper, and spoon onto eggs. Top with cheese. Cook uncovered in a 350-degree oven until cheese is melted (10 to 15 minutes). Makes four servings.

Denver Sandwiches

  • Butter softened
  • 8 slices of bread or toast
  • 1 small onion, finely chopped, 1/4 cup
  • 1/2 small green pepper, finely chopped
  • 1 tbsp butter
  • 1 tbsp shortening
  • 4 eggs
  • 1/2 cup chopped, cooked ham
  • 1/4 tsp salt
  • 1/8 tsp pepper

Spread butter over four slices of bread, cook and stir onions and green pepper in 1 tsp of butter and the shortening in a 10-inch skillet until onion is tender. Beat eggs, slightly, and stir in remaining ingredients. Pour egg mixture into skillet. Cook over low heat just until set. Cut into four wedges, turn, and cook until light brown. Serve between bread slices. Makes four sandwiches.

Cheese and Chilies Oven Omelet

Let me just be clear that there are no chilies, like chilies with beans or anything, that are like green chilies. It will not look like the picture — sorry! :-)

  • 2 cups of shredded cheddar cheese
  • 1 can, 4 oz, chopped green chilies, drained
  • 2 cups shredded Monterrey Jack cheese
  • 1 1/4 cups milk
  • 3 tbsp flour
  • 1/2 tsp salt
  • 3 eggs
  • 1 can, 8 oz, tomato sauce

Layer cheddar cheese, chilies, and Monterrey Jack cheese in a greased square baking dish (8x8x2 inches). Beat milk, flour, salt, and eggs. Pour over cheese mixture. Cook uncovered in a 350-degree oven until set in the center and the top is golden brown (about 40 minutes).

Let stand 10 minutes before cutting. Heat the tomato sauce and serve with an omelet. Makes eight servings.

Serving Suggestions

Now that you have all or part of your brunch menu set, you can serve other drinks such as coffee, tea, mineral water, or the like. At any rate, offer something besides alcohol, and since brunch is early in the day, the alcohol needs to be light. I know that the mimosa recipe calls for a certain amount of champagne, but you can still use discretion when it comes to people going on with their day. You don’t want anyone to be sluggish while they are driving, so at least limit the alcohol. Offer only one mimosa and make that during the eating and serving time. Then offer more of the other beverages after the one serving of alcohol is met.

Serving the mimosas only during the brunch makes it easy to limit them. That way you can say you only made enough for the serving of food.

Mimosas (Adults Only)

Now, what we’ve all been waiting for, what pulls this little brunch together!

  • 8 oz orange juice
  • 16 oz champagne or prosecco
  • 2 oz liqueur, triple sec (*optional)
  • Orange slices for garnish

Evenly divide ingredients among four champagne or cocktail glasses. Garnish with orange slices if desired.

Turns the simplest brunch into a luxurious mid-morning treat!

*And just to be clear, there was no drinking at our women’s church brunches. :-)
