Best-Ever Garlic Bread

Garlic bread is an essential part of any Italian meal. It might seem silly to put any effort into it- all you’re using it for is for mopping up extra sauce from pasta. However, bland bread plus flavorful sauce equals bland. I always try to make each element of my meal is packed with flavor. Great garlic bread is only an extra ten minutes of effort and is absolutely worth it.

Many people have been making bread during the pandemic; if you’ve become a baking pro, use the results of your hard work for the bread in this recipe. I am not one of those all-star bread makers, so I buy great bread from my local bakery instead. Why go through the effort of making garlic bread if I’m just going to use sad, old bread? Visiting a local bakery accomplishes two things: using delicious bread and supporting small businesses during this tough time. A baguette, Ciabatta, or any chewy, crusty bread is a good choice.

I live by the Italian motto that there is no such thing as too much garlic. If you’re more of an acquaintance of garlic and less of a garlic lover, feel free to use fewer cloves. When broiling the bread at the end of the recipe, make sure to watch it like a hawk. The bread can go from perfectly crisp to burn in 30 seconds. As a child, when I was in charge of making the garlic bread, I often got distracted by something and subsequently ruined the side dish. After many burnt pieces of bread, I’ve learned the hard way to pay close attention! Perfectly crispy, flavorful bread is my reward for learning my lesson. 1 12 inch loaf of good quality crusty, chewy bread

4 garlic cloves finely minced

2.5 tbs unsalted butter

1/4 tsp oregano

1/8 tsp rubbed sage

1/8 tsp thyme

1/8 tsp smoked paprika

1/8 tsp black pepper

1.5 tbs Parmesan cheese, grated


  1. Preheat oven to 375F.
  2. Cut loaf in half lengthwise. Put the two halves inside up on a baking sheet.
  3. Melt butter. Spoon batter evenly over the two halves. Sprinkle garlic evenly over the bread. Sprinkle spices and Parmesan evenly over the bread.
  4. Bake for 5 minutes. Remove from oven. Turn oven to broil. When the oven is ready, put bread in for 2–3 minutes. Watch carefully. Remove when the bread is deeply golden and crispy.
  5. Cut into pieces and serve immediately.
