Easy BBQ Chicken Meal Prep Using Insta-Pot

Everyone loves a good meal prep recipe that is either quick or cooks itself, am I right?

Well lucky for you, this does both!

The main dish here is incredibly tasty and savory. Let me introduce you to … INSTA POT BBQ CHICKEN. The side dishes are up to you! I chose an easy vegetable and a super-food starch!

You can either whip this up for a dinner that the whole table will love or meal prep it for the week! I prefer to meal prep the whole week because I never get tired of it and it’s easy to prep on Sunday for a busy week!

Ingredients:

  • 1 1/2–2 pounds of boneless skinless chicken breast (I purchased Trader Joe’s organic brand)
  • Half a bottle/ whole bottle of your favorite BBQ sauce (based on size of bottle)
  • 1 tbsp of Lawry’s seasoned pepper — may substitute any pepper you like
  • 1 tbsp garlic powder

Instructions:

1. Pour the BBQ sauce into your Insta-Pot, and turn it on high for 1 1/2–2 hours. If cooking on low, it will take about 4–5 hours.

2. Place thawed-out chicken breasts into the sauce, and flip a couple of times to coat the sauce evenly onto the chicken. Sprinkle in seasoned pepper and garlic powder and cover.

3. About an hour before the chicken is done, bake the sweet potatoes. First, pre-heat the oven to 400 degrees F. Don’t forget to wash them!

4. When the chicken is done, take out each chicken breast and shred it between two forks. This should be easy and not take much effort. After the shredding is complete, throw it back in the sauce to soak up the flavor!

5. Either place them on plates for family dinner or place them into meal prep containers to enjoy for the whole week!

How To Cut The Potatoes:

  • Place on a cutting board and cut off the ends. Cut from one end to the other (horizontally). Your cuts can be as thick or thin as you want it! I do around 1/2″ thick for each cut.
  • Once you have your circles, cut them again in half or into quarters and place them on a non-stick baking sheet.
  • Evenly coat the sweet potatoes in olive oil, smoked paprika, garlic powder, salt, and pepper, and toss evenly.
  • Place pans into the oven for about 45-minutes at 400 degrees F. Flip with a spatula halfway through to cook both sides.
