Fresh And Tasty Dinner With Shrimp Linguine
As working from home keeps continuing, I ended up cooking food for myself more. I notice that I often cook too much for just one meal and then have to eat it again for dinner or breakfast the next morning. And so I challenge myself to cook just enough for every meal, and it is not as easy as I thought and cannot do in the first attempt. Yet gradually, I get closer to know how much is enough to make myself full without getting reflux. Cooking for every meal takes more energy for sure from cutting to cook and to wash the dishes, yet the taste of fresh food makes me happy.
For tonight dinner, I happen to get enough amount when making the Shrimp Linguine with the following recipe:
3 big shrimps
a slice of lime
a sprinkle of garlic
some sprinkle of salt
2 cloves of garlic
half centimeter of ginger
a sprinkle of dried oregano
a sprinkle of white pepper (or black, whichever available)
2 cups of water (probably a bit less)
About two-finger size of linguine
a stem of coriander leaves
a stem of celery leaves
1 tbsp of oil for cooking
Boil the water first. If you are a multitasking person, cut the shrimp to four pieces and marinate it with squashed lime, a sprinkle of salt, and a sprinkle of garlic powder and set aside. Put the linguine once the water is boiling. Dice the onion and ginger. Chop the celery and coriander leaves.
Once the linguine is ready, you can switch the boiling pot with your frying pan or wok. Sautée the garlic, ginger, and shrimp with the oil at the same time. Sprinkle some white pepper and oregano and stir them well. Then put the linguine with some boiled pasta water, then stir again. At this time, you can either put the celery leaves, it will create a delicious flavor, or you can save them later as toping mixed with coriander leaves.
After 3 minutes, get your fork ready. Place your linguine on your plate, then add the celery and coriander leaves as toping. The recipe looks to have many things on the list, yet it’s actually simple and should make you proud of making delicious food.
