Healthy Homemade Chicken Tenders

These quick and easy chicken tenders will have you coming back for more!

These healthy homemade chicken tenders have quickly made a staple in my house, and I know they will be in yours as well! This is a quick and easy 20-minute lunch, or can be made as a meal prep! Here’s what you’ll need:

Ingredients:

Chicken

Crackers, your choice

1–2 eggs

Instructions:

  1. Make sure to thaw the chicken out completely before cooking.

2. While waiting on the chicken to thaw, crack 1–2 eggs into a small bowl (I typically start with one, and add a second egg if needed).

3. Take your chosen crackers, add them into a food processor and blend until you have a fine, grain-like consistency. If you don’t have a food processor, just put the crackers into a zip lock bag and mash them up! Then place in a bowl.

4. Once chicken breast(s) is thawed, sliced chicken into multiple pieces that resemble a bite- chicken tender.

5. Step 5 is up to you.

Options:

Air fryer: 400 degrees for 16–18 minutes

Oven: 425 degrees for 15–20 minutes on a baking sheet — make sure to cover with olive oil or tenders will stick (I prefer to cook in the oven. This way seems to get the chicken very juicy and crispy. In the air fryer, they get crispy but a bit too dry)

6. Place 2–4 pieces of sliced chicken into a bowl with eggs, once they are saturated in eggs, place 1 tender at a time into the bowl with crushed crackers. Once both sides are covered in crumbs, place them onto a cooking sheet. Continue this process until the baking sheet is filled, then place it in the oven/ air fryer.

7. Let chicken tenders cook, add your favorite dipping sauce and enjoy!
