Italian Spaghetti with Clams (Spaghetti alle Vongole)

This one can be easily counted as my favourite pasta main course! It is quite easy but requires a few tries to master the recipe and get a perfect result each time. There is also room for customization, there is no wrong o right here… but one:

Don’t ever dare put Parmesan on it! At least not in front of Italian people. 😝

Let’s start, as usual, with a list of ingredients and tools. This time, the quantities may be a little odd to you. It’s just because my wife and I love it so much we end up eating almost a double serving for each!

Ingredients (2 adult servings)

  • Spaghetti — 250g (for me) or 180g
  • Clams — 750g or 500g
  • Garlic — 3 cloves (but it’s up to you)
  • Cherry tomatoes — 5 (but it’s up to you)
  • Extra Virgin Olive Oil
  • White wine (a couple of fingers)
  • Black pepper — optional
  • Parsley — optional
  • Salt

Tools

  • Large Pot (enough to comfortably boil spaghetti)
  • Large Pan
  • Tongs
  • Wooden Spoon
