Italian Spaghetti with Clams (Spaghetti alle Vongole)
The most common and famous main course in Italian coastal regions
This one can be easily counted as my favourite pasta main course! It is quite easy but requires a few tries to master the recipe and get a perfect result each time. There is also room for customization, there is no wrong o right here… but one:
Don’t ever dare put Parmesan on it! At least not in front of Italian people. 😝
Let’s start, as usual, with a list of ingredients and tools. This time, the quantities may be a little odd to you. It’s just because my wife and I love it so much we end up eating almost a double serving for each!
Ingredients (2 adult servings)
- Spaghetti — 250g (for me) or 180g
- Clams — 750g or 500g
- Garlic — 3 cloves (but it’s up to you)
- Cherry tomatoes — 5 (but it’s up to you)
- Extra Virgin Olive Oil
- White wine (a couple of fingers)
- Black pepper — optional
- Parsley — optional
- Salt

- Large Pot (enough to comfortably boil spaghetti)
- Large Pan
- Tongs
- Wooden Spoon
