When winter starts in Turkey, winter vegetables such as cauliflower, broccoli and cabbage fill the shelves in the greengrocer. It is quite easy to turn these vegetables into delicious meals that everyone will love with a few small touches.

Cabbage is a rich and delicious winter vegetable. Although Turkish people generally prefer to consume it with minced or cubed meat due to its bland taste, I leave a wonderful vegetarian-friendly and delicious recipe below. It can be consumed as an alternative to pasta with portion control while in healthy diet.

Roasted Cabbage by ilsusevinc

Ingredients

1 cabbage

2 onions

2 cloves of garlic

4–5 green chili peppers

1 tablespoon of chili paste

2 tablespoons of soy sauce

1 tablespoon of olive oil

Optional salt, pepper, red pepper, cumin

Preparation

1-Finely chop the cabbage. Put it in a non-stick, granite, or cast iron pan without adding oil or water and ignite the stove. Cook for about half an hour until the cabbages are caramelized. It can stick to the pan and caramelize, we prevent it from sticking by mixing.

2-Chop 2 onions and 2 cloves of garlic and add them to our cabbage. After cooking for 5 minutes until the color of the onions changes, add hot water to it. It will accelerate the cooking of the onion by removing the mixture sticking to the pan.

3-After the onions and cabbages are well mixed, add the spices.

4-Finally, add the finely chopped peppers, soy sauce, and olive oil. Mix it for 5 minutes on low heat and serve it without losing the greens of the peppers.

You can serve with sesame if you want.
