Picture this: You’re at home, doodling around in your kitchen, hungry but unsure what to eat. Or you’re out shopping, and you’re struck down by a hunger pang, but you’re in between normal mealtimes. Or maybe you’re looking for an after-dinner treat or an on-the-go snack.

Enter scones. Scones are one of my favorite things to make — they’re easy, simple, versatile, and, above all, delicious.

I haven’t always loved scones. With traditional recipes, you’re stuck rolling out the sticky dough, using cookie cutters, and praying you to get the right thickness so you can get the optimal bake. Before I worked out my scone recipes, I thought the baked goods seemed out of reach, maybe something I’d whip up on special occasions only.

Here’s the secret to picture-perfect, easy, scrumptious scones: Use a cake pan.

That’s not the only crucial step — my recipe has been tested time and time again using this method, so I wouldn’t plop just any scone batter into a cake pan — but finding this trick has cut my scone-prep time by at least 30%.
