Vegetarian Style Hong Kong Yee Fu Mee

This is another dinner savior when I can’t think of something or too busy to make a lavish dinner.

“Mee” is a Chinese word, especially popular in Malaysia and Singapore, and it means Noodles or a dish that contains Noodles; hence I am not calling my dish another Noodle dish.

We are not vegetarians, but we do prefer vegetable dishes over meat dishes. It’s so easy to prepare this noodle dish with less or no hustle and bustle.

There is no definition or choice of vegetables in the dish; that is literally up to you. Just throw in whatever you have in your pantry.

Though some veggies are highly recommended, such as red Bell pepper as it brings an additional aroma and color to the dish, and Bok choy, Broccoli brings in the greenery effects and the health benefits.

Consider crunchy veggies to create colorful dishes and cook together or have almost the same cook time, such as carrots, cabbage, and Napa cabbage.

Please do not cook noodles upfront as it’s not nice to keep the drained noodles until vegetables are done. Noodles may tend to stick and would be very hard to fold and toss. Keep the Noodle cooked water incase if you need to use it.
