When Life Gives You Lemons Make This Zesty Lemon Chicken Pasta

A quick and easy pasta recipe that is finger-licking good! Made with fresh ingredients and irresistible flavors.


  • 1–2 Cups of Rotini Pasta (cook according to the instructions on the box)
  • 2 pieces of Chicken Breast (cut in cubes)
  • 1/3 Cup of Red Onion (finely chopped)
  • 2 Cups of Broccoli
  • 1/3 Cup of Red/Orange Bell Pepper (finely chopped)
  • 1 Yellow Onion (diced in cubes )
  • 1 Lemon
  • 1 Zucchini (chopped)
  • 1 Green Thai Chili Pepper (finely chopped)
  • Coriander/Cilantro (freshly chopped for garnishing purposes only)
  • 1/2 tbsp Salt
  • 1/2 tbsp Black Pepper
  • 1/2 tbsp Dehydrated Onion Flakes
  • 1/2 tbsp Italian Style Seasoning
**Chop up the vegetables and put them aside for later**


First, bring a large pot of water to a boil. Add salt to taste and then add your rotini pasta. Allow pasta to cook according to the package cooking time

In a separate pan, add 2 tbsp of olive oil and add your finely chopped red onion. Squeeze half a lemon and mix well.

Add the diced chicken breasts, wait until they are cooked, then add broccoli. Let the broccoli cook for a little bit and then add about 1/4 cup of water.

Go ahead and add all the spices in order: salt, crushed black pepper, Italian style seasoning, dehydrated onion flakes, and the finely chopped green Thai Chili pepper. Be sure to always mix well after adding each spice and seasoning.

Next, add all the remaining vegetables and mix well. Then add about 1/3 cup of water and allow vegetables to steam. Add freshly chopped coriander and mix well.

Once the water is dried, add your cooked and strained rotini pasta and mix well.

Add about a pinch of Italian style-seasoning and a pinch of dehydrated onion flakes and mix well again. Now squeeze the remaining half of the lemon to the finished pasta.

And voila, there you have it — your pasta in just under 30 minutes. Every bite of this pasta will be a burst of different flavors in your mouth. So enjoy, happy munching!
