A Tantalizing Lime Pulled Pork

Steamed broccoli with freshly squeezed lime and butter makes a great side dish!

Pork
2-pound pork roast

Marinade
4 tablespoons olive oil
2 limes (squeezed)
1 red onion (chopped)
1 tablespoon garlic (minced)
1 tablespoon cilantro (chopped)
1 tablespoon parsley (chopped)
1/2 tablespoon red pepper flakes
A dash of salt & red pepper flakes

Searing
3 tablespoons of butter

Fill a sealable bag with the marinade. Add the roast and place in the fridge for at least 24 hours.

Melt butter in a skillet while keeping the marinade aside. Sear the roast and add the marinade. Cover and cook at 325 degrees in the oven for 1 hour. Turn the meat over and cook for another hour.

When the meat reaches 190 degrees it is ready. Enjoy!
