An Easy Corn Beef Dinner

“Corned beef and cabbage” is often devoured on St. Patrick’s Day.

Corn Beef
1 packaged corn beef
2 onions (halved)
32 ounces of beef broth

Vegetables
6 potatoes (red, quartered)
1 pound carrots (peeled, chunked)
1 head of cabbage (wedged)
Salt & pepper

Turn crock-pot to low. Rinse beef and pat dry. Crush the seasoning packet and rub on the beef – place onions in the pot. Position the meat with the fat up. Pour in the broth and cook for 8 hours.

After 6 hours, preheat oven to 425 degrees and fill a roasting bag with seasoned veggies. Close and poke holes in the bag with a knife. Roast for 2 hours.

It’s mouth-watering. Enjoy!
