Known as “the little dragon,” the story goes that Mongol invaders brought Tarragon to Italy during the 10th century. The French use it for “fines herbes,” and St. Catherine brought tarragon to France for Pope Clement VI in the 14th century.

Horticulturists propagate by division since its flowers are sterile. Its roots are dragon-like, and its leaves are moon-like. Legend says the Greek goddess Artemis gave it to Chiron the Centaur, Cronus’ son with Oceanid Phylira. Chiron later traded his immortality for Prometheus’ liberation.

Nomenclature: Artemisia dracunculus
Tastes: Hints of vanilla, licorice, anise, minty, peppery
Uses: Chicken, egg, and fish dishes, breath freshener, sleep aid
Origin: Siberia/Mongolia
