Bring Harmony and Tang with Sumac

Sumac grows wild in the Mediterranean and Middle East, and people use it as a spice and dye. An ingredient in Za’atar spice, it complements meat as a dry rub. The Romans used sumac as a souring agent before lemons came along, use a 4:1 salt to sumac ratio.
