An electric skillet is amazing!

Cacciatore
2 Chicken Breasts
1 onion (chopped)
1 red pepper( chopped)
1 package of mushrooms (sliced)
1–15 ounce can of fire-roasted tomatoes (diced)
1 can of black olives
3 tablespoons of Almond flour
3 tablespoons of Irish butter
1 tablespoon of both: Italian seasoning and Basil
1/2 tablespoon of both: garlic and onion powder
A dash of salt & pepper

Season the chicken and vegetables. Dust the chicken with flour. In a 350-degree skillet melt 1 tablespoon of butter to brown the chicken. Now add the remaining butter. Lightly cook the veggies. Place the chicken and diced tomatoes on top. Cover, and continue cooking until done.

The black olives make a great side dish. Enjoy!
