Easy Bean Burritos

For my weekly meal plans, I make five cups of dried pinto beans. They take forty minutes in an instant pot, and I make three different meals from them.
These basic burritos are the first meal. I often stuff them with rice, guacamole, pico de gallo, and salsa. Or smother them with creamy tomatillo salsa.
Ingredients
- 8 wheat tortillas
- 4 cups refried beans
Optional ingredients
- Pico de gallo
- Salsa
- Guacamole or sliced avocado
- Mexican rice
- Jalapeños
- Chopped lettuce
Directions
- Preheat indoor grill to 400°F.
- Place 1/2 cup beans and any optional toppings in the warmed tortilla and roll into a burrito.
- Place on grill and cook for roughly 4 minutes on each side.
- Top with any additional toppings.
- Serve.
Notes
- Eat within 4 days, unless freezing.
- If freezing or storing in the refrigerator, do not top with topping until serving.
