Handmade Roman Noodles
Like being back on our honeymoon
The first night of our honeymoon, we arrived exhausted at our hotel in Rome. We wanted “real Italian food” — quickly.
We got traditional Roman Noodles — hand cut square pasta in a garlic butter and black pepper sauce. Delicious! So delightfully chewy!
I saw the recipe for classic pasta dough on the back of my bag of Bob’s Red Mill Semolina flour. I thought I’d try it.
First of all, I learned that you can’t use a knife to cut the dough without tearing it. Using a pastry cutter takes forever. The water started boiling while I was still cutting, so I was cooking one batch of noodles while I cut out the next batch.
Homemade garlic knots and Celentano baked homestyle meatballs in marina sauce rounded out the meal. It was like being back in Italy!
