Head Over Heels Cauliflower Falafel

I enjoy making side dishes that unexpectedly become the star of the meal!
Falafel
1/2 head of cauliflower (steamed, smashed & cooled)
1/2 onion (diced, sauteed & cooled)
2 eggs (cracked & beaten)
1/2 cup almond flour
3 tablespoons arrowroot flour
1 tablespoon garlic powder
1 tablespoon parsley
1/2 tablespoon cumin
1/2 tablespoon chili powder
A dash of salt & pepper
Avocado oil (for frying)
In a bowl, mix all the ingredients except for the oil to create a dough. Roll into balls. Heat some oil in a large skillet. Cook each falafel until golden brown on all sides.
