How Do You Like Your Eggs?
Egg-citing ways to spruce up breakfast favourites
1. Fried
Melt butter in a pan. Add seasoning — paprika/curry powder with sage/curry leaves. Cook until fragrant. Crack in an egg. Tilt pan and spoon seasoned butter over egg.
2. Scrambled
Whisk egg with milk for egg-stra fluffiness and a little coconut oil. Season and cook. Serve on toast with charred cherry tomatoes.
3. Baked
Add cream to ramekin. Top with cheese and bacon/ham. Crack in an egg. Season. Bake ramekin in an oven tray containing water.
4. Boiled
Halve hardboiled eggs. Scoop yolks into a bowl. Add mayonnaise, dijon mustard and seasoning. Blend. Fill whites with mixture. Top with coriander/chives.
5. Poached
Cook onion, garlic and chopped tomatoes to form a chutney. Season with paprika, salt and dried thyme. Add a poached egg to the chutney. Top with cilantro.
