I Made My Own Mayonnaise

It was easier than I thought

I got home from Walmart, realizing I’d forgotten to buy mayonnaise. I wanted chicken salad for work lunches for the coming week.

I remembered seeing a recipe for homemade mayonnaise and went looking online. A quick Google search showed me several basic recipes, so I chose one that looked easy.

This recipe included one room temperature egg, one cup of oil (I used light olive oil), 1 tablespoon vinegar, 1/4 teaspoon mustard, and other seasonings as desired.

Using my cheapie little blender, I mixed the egg, vinegar, mustard, and seasonings. Then I slowly drizzled in the oil as the blender ran, emulsifying the mixture.

Everything went smoothly, and now I have a jar of mayonnaise!

Luckily, I have friends with chickens. I used a fresh egg for this recipe.
