Simple, healthy, and delicious pico de gallo salsa

There’s so much good about this pico de gallo salsa. Try experimenting— a little more of this or less of that. And did I mention it’s healthy?

Ingredients

  • 4 Roma tomatoes
  • 1/2 white or red onion
  • 1 jalapeño pepper (remove seeds for less spice)
  • 1–2 cloves garlic
  • 1 lime or to taste
  • 1/3 cup cilantro
  • 1 tsp. salt or to taste
  • Optional add-ins — diced avocado or cucumber

Directions

  1. Chop tomatoes, onions, pepper, garlic, cilantro, and optional items if using.
  2. Place them in a bowl.
  3. Squeeze lime juice over everything.
  4. Add salt.
  5. Mix gently.
  6. Adjust for taste and serve.

Notes

  • Try on tacos, nachos, burrito bowls, or corn tortillas and refried beans.
  • I like to let it sit for 30 minutes to blend flavors, but it’s usually gone before then.
  • If adding avocado or cucumber, you may need more lime juice and salt.
