Pico de Gallo Salsa

There’s so much good about this pico de gallo salsa. Try experimenting— a little more of this or less of that. And did I mention it’s healthy?
Ingredients
- 4 Roma tomatoes
- 1/2 white or red onion
- 1 jalapeño pepper (remove seeds for less spice)
- 1–2 cloves garlic
- 1 lime or to taste
- 1/3 cup cilantro
- 1 tsp. salt or to taste
- Optional add-ins — diced avocado or cucumber
Directions
- Chop tomatoes, onions, pepper, garlic, cilantro, and optional items if using.
- Place them in a bowl.
- Squeeze lime juice over everything.
- Add salt.
- Mix gently.
- Adjust for taste and serve.
Notes
- Try on tacos, nachos, burrito bowls, or corn tortillas and refried beans.
- I like to let it sit for 30 minutes to blend flavors, but it’s usually gone before then.
- If adding avocado or cucumber, you may need more lime juice and salt.
