South African Buttermilk Rusks

Buttermilk rusks cooling on a wire rack

Rusks are hard biscuits. Dunk or eat as is.

Ingredients:

  • 250g Butter
  • 250g sugar
  • 4 cups Flour
  • 2 tsp Baking powder
  • 1 tsp Salt
  • 1 cup + 2 tbsp Buttermilk
  • 3 tbsp Sliced almonds (optional)

Method:

  1. Preheat oven to 200 degrees celsius
  2. Melt butter and sugar in a pot.
  3. Sift dry ingredients. Make a well in the centre.
  4. Whisk buttermilk. Add to dry ingredients. Mix by hand until buttermilk is absorbed.
  5. Add hot butter mixture. Mix with spatula until no dry flour is visible. Mix in almonds.
  6. Spread mixture into 15-inch greased baking tin. Bake for 30 minutes or until edges start to brown.
  7. Cool for 15 minutes. Slice into rectangles and place on a wire rack.
  8. Put rack in oven with the door slightly ajar. Dry rusks in oven for the next 2 hours.
  9. Cool and enjoy!
