South African Buttermilk Rusks

Rusks are hard biscuits. Dunk or eat as is.
Ingredients:
- 250g Butter
- 250g sugar
- 4 cups Flour
- 2 tsp Baking powder
- 1 tsp Salt
- 1 cup + 2 tbsp Buttermilk
- 3 tbsp Sliced almonds (optional)
Method:
- Preheat oven to 200 degrees celsius
- Melt butter and sugar in a pot.
- Sift dry ingredients. Make a well in the centre.
- Whisk buttermilk. Add to dry ingredients. Mix by hand until buttermilk is absorbed.
- Add hot butter mixture. Mix with spatula until no dry flour is visible. Mix in almonds.
- Spread mixture into 15-inch greased baking tin. Bake for 30 minutes or until edges start to brown.
- Cool for 15 minutes. Slice into rectangles and place on a wire rack.
- Put rack in oven with the door slightly ajar. Dry rusks in oven for the next 2 hours.
- Cool and enjoy!
