My friend’s food forest has a tall Inga Edulis tree with plenty of fluffy pompom-looking flowers which will turn into broad ice cream beans.
Inga E. can grow to 17 meters tall and has creamy thick green foliage. They thrive in tropical weather — heat tolerant and don’t melt in your hands.
They are excellent trees for forest layering and are known for their nitrogen-fixing roots or for sweet cravings. 😋
It takes 3–7 years from seed before they fruit.
Seeds can be eaten cold and raw —said to taste chewy with a tinge of vanilla.
