Welcome Autumn!
Now let’s bake up some pumpkin!
The universe heard that I was missing Fall.
There are still no traditional autumnal colors in the swamp, but the autumn equinox has brought cooler air (yes!) with it some pumpkin tea and fall festivities!
This morning the kids and I pulled out the pumpkin purée and whipped up some pumpkin cake, (or what many call, pumpkin bars). I use my tried and true recipe from the Better Home and Gardens cookbook — maybe you have one too? It’s the one with the red (or pink) checked cover?
We just frosted the cake! And, mmmmm! Mmmm! there’s just nothing like a spiced cake with a cream cheese frosting. Oh boy!
The only problem is I made a smaller cake and I have extra pumpkin. What should I do?
