Why does Pizza Taste better after Midnight?

Pizza, especially Chicago-style pizza, is a good thing. But sometimes it rises to excellence, a tastebud tingling epiphany. And those times are generally after midnight.

So it has been a bane to me that every Chicago-style pizza place I’ve found (outside of Chicago of course) closes at 9:30 pm. But finally, a place in LA has opened with sensible hours i.e. open till 2 am.
