How I Solved Three Vegetable-Related Problems in One Afternoon

And saved money in the process

Cooking for two and trying to get one of us to eat veggies, I won’t mention any names, feels like an exercise in futility.

It never fails; I have at least one, if not all, of the following problems week after week.

Problem 1: Including a colourful selection of vegetables in at least one daily meal.

Problem 2: Fresh vegetables quickly get old in the fridge.

Problem 3: The high cost of fresh vegetables, particularly in winter, is discouraging, considering they get old in the fridge.

But one lightbulb moment led to another, and I not only solved my vegetable-related problems, but I also saved money.

Here’s how

In a recent grocery order, I included one of my favourite things—hot pickled peppers. They are delicious on burgers and in wraps, and after pressing “add to order,” I had my first bright idea. I searched my grocery store app for more pickled vegetables, and they had a small selection, so I ordered one jar.

A few days later, I had a new problem: the vegetables tasted okay, but the jar…
