The 4 Greens Burrata Salad

I love green vegetables, but I rarely eat them in a salad. This salad was one of my first experiences with cold green vegetables, and probably not the last one!

I used frozen vegetables and cooked them in the oven with olive oil and spices, so they ended being a bit crunchy and really tasty.

And with burrata, cashew & sesame seeds on top, it was a perfect and complete dish.

Recipe for 2 servings

Ingredients:

  • 150g of frozen green peas
  • 150g of green beans
  • 150g of frozen brussels sprouts
  • 150g of frozen broccoli
  • 1 burrata di bufala
  • 2 tbsp of sesame seeds
  • 2 tbsp of cashew nuts
  • Olive Oil
  • Balsamic Vinegar
  • Lemon juice
  • Salt
  • Pepper
  • Paprika
  • Garlic Powder

Recipe

1. Preheat your oven at 180°.

2. Put some baking paper on a baking tray and spread the greens peas, green beans, brussels sprouts, and broccoli on it.

3. Season them with olive oil, garlic, paprika, salt, and pepper.

4. Put them in the oven for about 15 to 20 minutes (180°).

5. Once cooked, let the vegetables cool (I put them on my balconey for 10 minutes).

6. Time to prepare your plates:

  • Put half of the cooked vegetables on each plate and season with lemon juice, balsamic vinegar, and a bit of salt and pepper.
  • Add 1 tbsp of sesame seeds and 1 tbsp of cashew nuts on each plate.
  • Cut your burrata into big pieces, spread evenly on the salad. and finish with a small touch of olive oil.

Ready, set, eat!
