Last month I was privileged to join in an online Chocolate and Wine tasting hosted by the exclusive Pall Mall 67 Wine Club and the craft chocolatier company Cocoa Runners. There was no better way to celebrate my 38 years on the planet by combining two of my favourite things in the world.

The tasting was fun yet informative and damn-right delicious. Cocoa Runners pride themselves on sourcing the finest bars from ethical craft chocolate makers. Ensuring that small farmers are rewarded fairly for their dedication in nurturing the finest cocoa beans from around the globe.

For me, red wine and chocolate are a match made in heaven. The reason why they are a perfect pairing is that they both contain tannins. Tannins chemically bind with the proteins in one’s mouth, causing a drying sensation which is technically known as astringency. Rather than leaving you parched, a double whammy of tannin from dark chocolate and red wine brightens your taste buds. The combination of bitterness and astringency stimulates the olfactory centre in the brain, helping you detect subtle flavours in both.
