Hummus was once a basic spread made of chickpeas, olive oil, and spices. Then the food industry recognized the American penchant for bastardizing traditional recipes by adding completely alien ingredients. In the interest of accommodating American tastes, the following hummus flavors may soon be in test kitchens:
