Heart on a plate: Macaroni in a Paprika Veggie Sauce

Today was a lazy day. Little Vedu was waving his arms in his sleep all night — which meant I was getting no sleep. I slumbered on and woke up at 10 AM ( bad mommy) to a uper happy child LOLing on the bed! The poor hubby though had to go to work on an empty stomach because mommy was too groggy to get outta bed!

Finally, after 2 episodes of The Good Fight, 2 sessions of breastfeeding and 3 slices of heavily buttered toast later, my brain and energy were back to normal. My nice mother-in-law was in the mood for something spicy for lunch, so I pondered- lazy+ spicy+ yummy+ hearty= PASTA. ALWAYS PASTA.

Here’s my recipe for Paprika Pasta with a killer veggie sauce. It’s ready in minutes and will keep you smiling all day.

P.S: The Paprika in this recipe is a gift from my parents- all the way from BUDAPEST. SO YUM!

Pardon the dirty picture- I WAS SO HUNGRY!

Ingredients:

1 small cup cooked macaroni

100 gms sliced cherry tomatoes

100 gms mixed veggies- spinach, corn, thinly sliced aubergine, onions

2 tbsp paprika

2 tbsp ginger garlic paste

2 tbsp oil to cook veggies in

3–4 fresh basil leaves

1/2 cup water

salt to taste

Prep time: 20 mins. Cooking time: 20 mins. Serves 2 people.

Always cook sauces LOW AND SLOW.

How to make:

  1. Cook the macaroni as per instructions on the pack.
  2. In another pan- add onions and cook till translucent.
  3. Add rest of the ingredients except basil and turn the cooking flame down.
  4. Cook till the sauce becomes thick and the tomatoes have become all squishy!
  5. Add basil leaves and simmer for 2 mins.
  6. Add pasta in- mix in sauce, simmer for 1 min and turn off the flame.
  7. Add cheese if desired.
