Quickie Lunch- Cheesy Bharwan Mirchi

I am a sucker for one pot lunch recipes. And my mother in law- a sucker for anything that isn’t roti sabji. Poor thing, she has been eating it ALL HER LIFE ( 3 times a day- EVERYDAY) that I don’t think she even wants to be around it anymore, even the smell of it!

This week, for lunch, I decided to spice it up! The inspiration for this stuffed chilli came from our family dinner at this fusion restaurant in Pune called Zora. We had been there when I was pregnant( god that seems SUCH A LONG TIME AGO!) and this was the only starter on the table that I LOVED.

Here is my recipe for stuffed mirchi!

Ingredients:

5–6 big green chillies ( the ones used for frying as bhajias)

1 1/2 cubes of Amul cheese — grated

1/2 onion- chopped

a few sprigs of coriander

1 tbsp ginger garlic paste

1 tsp garam masala

50 gms crushed paneer

oil to cook

How to make:

  1. Combine all ingredients except chillies in a bowl to make a dough texture. Add salt if needed.

2. Do not knead the dough too much. Just mix in the ingredients.

3. Slit chillies vertically. Remove all seeds thoroughly. Chop off the ends.

4. Stuff chillies with the cheese dough. Stuff nicely!

5. In a pan, add oil and place chillies. Put pan on medium flame and cook till chillies have a black exterior char on all sides evenly.

6. AND DONE!
