Here is my recipe for mutton masala gravy. Keep in mind that specific recipes may vary, but this is a basic guideline to get you started:

Ingredients:

- Bone-in halves, about 500 g (of mutton, goat, or lamb).

- 2 large onions, finely chopped

- 2 tomatoes, finely chopped

- 1/4 cup yogurt

- 2-3 teaspoons of cooking oil or ghee

- 1 tablespoon ginger-garlic paste

- 1 teaspoon cumin seeds

- 1 teaspoon of red chili powder according to your taste.

- 1/2 teaspoon turmeric powder

- 2 teaspoons coriander powder

- 1 teaspoon garam masala

- Salt to taste

- Fresh coriander leaves for garnish

Instructions:

1. Marinate the mutton: In a bowl, mix together a cup of yoghurt with about 1 tsp. of red chili powder and 1/8 tsp. of turmeric powder and ½ tsp. of ground garlic, coriander and salt. Mix well. Put the mutton piece inside the marinade and leave it on for about 30 minutes or keep it inside the fridge to taste sweet.

2. Heat oil: Use a thick bottom pan or pressure cooker on a medium flame and heat up the oil. Toast the cumin seeds then add them into the cooking pot.

3. Sauté onions: Add the onions and simmer until they become golden. Stir occasionally to prevent burning.

4. Add tomatoes: Cook the masala and then put in some ripe but not mushy tomatoes and separate out some of the oil. This could take between 5 and 7 minutes.

5. Cook the marinated mutton: Lastly, put the marinated lamb flesh into the pot. Pan-fry the meat on medium heat.

6. Pressure cooking (if using): Half to three-quarters cup of water should be used with a pressure cooker; cook for three to four whistles or until soft. If you are using a regular pan, you can cook it, covered, after 40-50 minutes. Adding water is necessary.

7. Add garam masala and salt: Allow the mutton to become tender then sprinkle some garam masala into it and add salt to your taste. Cook for another 5 minutes in order to blend the flavors.

8. Garnish and serve: Garnish with fresh coriander leaves. Your mutton masala gravy is now available for serving.

Enjoy mutton masala gravy with steamed rice, naan, or roti. Change the spices as well as any preferred ingredient based on your own preference.
