Vegan Chorizo Salad Without Dressing
This salad is super healthy yet flavorful and vivid. Plus, it needs no dressing.

This flavorful salad is simple to make. There’s a nice contrast of textures and colors. Nothing high in fat or calories about it, since there’s no oily salad dressing. Totally healthy yet tasty.
Perfect for either lunch or dinner, even as main dish.
Serves 4 to 6 (depending on main or side dish)
Ingredients:
One bunch green leaf lettuce
One bunch cilantro
One red onion
One pint grape tomatoes
6 ounce can black olives (either whole or sliced)
MorningStar Farms Veggie Chorizo Crumbles (or substitute some other vegan chorizo)
Process:
- Tear lettuce into bite-size pieces. Do the same with cilantro.
- Chop red onion.
- Slice grape tomatoes.
- Slice olives (if not already pre-sliced).
- Cook chorizo according to the instructions on the package.
- Mix it all up.
