I love dieting — but let’s be honest, not all “healthy” food is exciting. Sometimes, I need a break from the plain and boring meals.
If you’re like me and crave something light but still bursting with flavour, that’s exactly where this salad comes in.
This Kimchi-style cucumber salad, inspired by the beloved Oi Muchim, is my go-to when I want something crunchy, garlicky, tangy, and totally guilt-free.
The twist? I kept it super simple—healthier with no spice (unless you want it) and quick with no fermentation.
