Quick and Easy Decadence for your Festive Party

This is no summer pavlova! The flavours are rich, Christmassy and grown up. With just a couple mouthfuls required, it makes for perfect party food or even a light sweet treat at the end of the big dinner.

You can throw this together in about fifteen minutes before the guests arrive or when you are ready to serve. The brandied cherries really make this extra special! If you haven’t got the brandied cherries you can leave them out and it will still be fabulous dessert! The cherry and rosemary really compliment each other and the pomegranate seeds add burst of a little something extra in each mouthful.

Double it to make even grander!

You will need:

About 8 mini meringue nests

1/2 cup or 200mls of whipping cream

1 teaspoon of quality vanilla extract

8 tablespoons of quality cherry compote

2 tablespoons of pomegranate seeds (optional)

A few sprigs of fresh rosemary

8 brandy soaked cherries (optional)

Whip the cream with the vanilla until soft and light peaks form.

Arrange the meringue nests in s circle in the place where you want to serve it — either on a platter or on the table.

Spoon a tablespoon or so pf whipped cream into the middle of each nest. Top with a tablespoon of cherry compote.

Tear the leaves of fresh rosemary and sprinkle over the nests. Next sprinkle over a handful of the pomegranate seeds if using and finally top with a brandied cherry. Add a few more sprigs of rosemary to garnish and it’s ready to devour!
