Spinach and Ricotta Christmas Tree

Easy Christmas fun food!

Easy to make party food is closer than you think! Mix, roll, bake, serve!

Ingredients:

1 Ready Rolled Puff Pastry sheet

235g fresh spinach

2 red onions, diced

250g ricotta cheese

50g fresh grated parmesan cheese

2 tsp garlic powder

2tsp dried herbs such as thyme or oregano

Salt to taste

Method:

Preheat the oven to 400F/200C.

In a large saucepan, cook the diced red onion in a tabespoon of oil until softened. Then add the fresh spinach and stir occasionaly for around 5 mintues until wilted down. Tip into a colander to drain all the liquid off. Use a spoon to squeeze any excess liquid out and allow to cool completley.

In a bowl, mix the ricotta and parmesan cheese together with a fork. Add garlic powder and dried herbs and mix in thoroughly.

Once the spinach and onion mixture is cool, finely chop with a knife or dicer. Add to the cheese mixture and mix together thoroughly. Season with salt and pepper to taste.

On a lightly floured surface, roll out the puff pastry sheet. Spread the spinach and cheese mixture over the pastry sheet leaving 2cm gap from the edge. Carefully roll the long edge up so you end up with a long log. Wrap in cling film/plastic wrap or parchment paper and refridgerate for at least 1 hour.

Remove from the fridge and unwrap. Slice into circles 2cm thick. Arrange on a baking tray lined with parchment paper. Start with a row of 6 circles at the bottom of the tray, the add a new row on top of 5 circles, then 4 and so on until you have built your Christmas tree. Don’t forget to add one at the bottom and don’t forget a star for the top! Yes, I did forget!

Bake in a preheated oven for 20–25 minutes.

Serve hot! Don’t eat them all yourself!
