The Easiest, Tastiest, Pickled Red Onions
The best condiment!
I am a huge fan of all things briney: pickles, olives, capers, I love them all.
One of my favorite restaurants near us has a seasonal hummus plate that features both olives and their house-made pickled red onions. I finally had the courage to ask what they did to make them taste so good, and the chef was kind enough to share: it’s lime juice. Thus, my journey in trying to recreate the recipe at home began.
Luckily, it only took one try to get it right! And now these red onions will be a permanent fixture in my fridge, with a batch ready to add to salads, sandwiches, and, yes, even a hummus snack.
Quick Refrigerator Pickled Red Onions
1 Large red onion, peeled, cut in half and thinly sliced
½ cup vinegar (I like apple cider vinegar)
½ cup water
1 tsp salt
1 tsp sugar (organic makes it vegan)
Juice of 1 lime
In a 16 oz. container with a lid, add your sliced onions. (I use a Thai takeout container, but a glass jar will work, too.) Pack them in if you need to. Heat the water and vinegar together in the microwave for about 3 minutes in a glass container (I use…
