Have you gotten a chance to practice your meal prep game yet? If not, you’ll want to read up on my first meal prep article linked below.

For those of you ready to test your multitasking skills, we’re going to prep a second meal while our main dish is baking in the oven!

Depending on your oven temperature, you have about 20–30 minutes of cook time until meal #1 is done. How do you stay productive in those few minutes? I use this time to prep a second meal. Now your meals don’t have to be heavy. They can be a light salad or a sensible snack. One of my favorite easy-to-prep meals is Tuna Salad. I like some crunch in my food so I also pack a small portion of crackers to pair with my salad.

Ingredients:
1 bag Spinach
4 cans Chunk light tuna in water (5 oz)
1 pack Cherry tomatoes
Blue or Gorgonzola Cheese
Crackers of your choice (I use Naan Crisps)

While you’ve got your first meal cooking in the oven, lay out 8 food containers to prep your second meal. You will also need 8 snack-sized sandwich bags for your crackers.

Step 1: Divide all ingredients equally into each container.
Step 2: Lightly pack crackers in sandwich bags (don’t overstuff; think portion control).
Step 3: Secure the lids of the containers and you’re done!

Three little steps, that’s all it takes and all while your other meal is baking away.

Other ideas for quick fixes are vegetables with peanut butter or humus, yogurt with granola and fruit, or overnight oats. Invest in some mason jars and turn these ideas into your grab-and-go breakfast.
