Creamed Beef With Sour Cream

I remember my mom cooking creamed beef for our family of six. It was a favorite of my three siblings and me. Our favorite way to eat it was over cornbread, toast, or biscuits. But noodles and rice make a good pairing too.

Grandma’s Style

One thing you’ll learn about cooking from me is that grandma-style leaves lots of room for self-expression. Why? Because I don’t measure — I taste for accuracy. A pinch, a dash, a palm-full, and a smidgeon are all very exact directions when you learn to appreciate them.

So don’t get stuck in a rut, experiment a little, tweak a lot, and you’ll be surprised to find your own flair for cooking.

Preparation:

In a large skillet: I brown about 1 lb of ground beef with onions, celery, fresh garlic, and bell pepper. When I get the mixture cooked, I add 4 tablespoons of butter. When the butter is melted, I sprinkle 4 tablespoons of flour over this and stir just long enough that it has time to mix with the meat and vegetables.

At this point, I add 1 cup of water and stir. The gravy will begin to thicken very quickly so I have a carton of milk ready to pour. I add milk a little at a…
