You’re Absolutely Right, Brian.

I had the good fortune of interviewing Sebastian Sztabzyb, one of the Co-Founders of Phil & Sebastian Coffee Roasters, a high end coffee brand here in Calgary, Alberta, Canada. Sebastian talks specifically about how when somebody walks into one of their stores, how they have to deftly handle the “I’ll take a dark roast” request. They don’t serve any. Their well-trained barista’s response wins over many to their coffee varieties, none of which are ‘roasted until they are bitter’.

At the time of the interview (August, 2017) Phil & Seb had just purchased a small coffee farm near the Montaña Santa Bárbara National Park in Honduras. It’s really impressive that a relatively small, local firm like theirs has vertically integrated from seed through to roasting through to the finished cup served in one of their stores. It’s a great story the rest of which you may also find interesting.
