To become the best pizzerias Lucali and Una Napoletena did not have to become big. Both the owners bake their pizza pies, along with the support staff. 99% of the USA’s companies are small businesses.

Mark Lacono, founder of Lucali, was into construction business. He did marbling and fabrication. After he leased the place, it took him 2.5 years to open the restaurant. Within two hours of opening, it was full. He prepares and serves pizza pies to 30 people at a time.People have to register before 5pm everyday to dine at Lucali. Jay Z and Beyonce are his fans.

He said in an interview “My grandmother did not have the huge arsenal of recipes. But, the few things she did make, she made spectacular. I only make pizza and calzone. But, I am going to do it really well”

Anthony, founder of Una Napoletena ran a bakery, before he started the pizzeria. People call him a pizza purist. He imported the oven from Italy, as American ovens were not good. He kneads the dough, prepares the sauce, fires up the oven, and bakes the pies. Restaurant remains open till the dough lasts.

He said in an interview, “…the dough is just flour, water, Sicilian sea salt, and that’s it. It is never refrigerated. It is naturally leavened.”

Both businesses believe in serving the community. They keep the craftsmanship alive. Big businesses such as Domino’s or cloud kitchens have not been able to affect their business. Indian micro businesses have the potential to be as great and impactful. Remember 75 year old entrepreneur, running Delhi-NCR’s most popular tea shop.
