Butternut Squash & Coconut Dahl

This is one of my favourite comfort foods. We know it’s October in my home when this dahl in my caldron. I love the evolution of the aroma as I make it and that then waffs around from it. I prefer eating it with fluffy rice and freshly baked bread.
If I have some left over, I add some veg stock to it and blitz it. You would be hard pushed to find a tastier soup.
Ingredients
1/2 of a large butternut squash. Peeled, deseeded and chopped into even chunks, small to medium in size
1 Tablespoon of coconut oil
3 cloves of garlic. Peeled and crushed
1 red onion. Peeled and diced
1 Tablespoon of ground turmeric
1 teaspoon of cayenne pepper
1 teaspoon of paprika
1/4 teaspoon of chilli flakes
1/2 teaspoon of ground coriander
1/2 fresh red chilli. Deseeded and finely chopped. (If you want a fiery dahl, include the seeds in the pot0.
