Red Onion Chutney
How do you eat yours?
I worked in a busy café in a shopping area many years ago. I made this chutney for the salad and sandwich bar. It wasn’t long before I had to make very large batches of this to keep up with demand.
What exactly is a chutney?
My definition of it is, a condiment made from fruits, vegetables, spices, and/or herbs, vinegar and sugar. It is not a jam because it is not just sugar week. Nor is it a pickle because it is not just vinegar.
There are thousands upon thousands of ingredient combinations which will produce a fabulous chutney. Experiment, play around, make fortuitous discoveries. Embrace the world of pungent seasoning!
How do you eat yours?
My main preferences are, in sandwiches, in salads, on crackers and with potato rissoles. I know people who like to add it to their soup and even into stews and curries.

2.5 kg finely sliced red onions
100 g finely sliced garlic
2 large bay leaves
